Classic gin cocktails: Gimlet

We often see lime/lime juice in cocktail recipes. Lime also often appears in cocktail recipes. Compared with the juicy yellow lemon, the green lemon is smaller and has a fresher aroma.

Seeded limes are more useful for making cocktails. They are rich in peel oil and the juice is more sour. However, when the quality of limes is poor (the peel is very thick and there is almost no juice), seedless limes should be used instead to obtain a higher juice yield.

You can also use canned lime juice for making cocktails at home.

Canned lime juice is made from lime juice, mixed with sugar, water and other ingredients. It is the most easily available sour mix, commonly known as sweet and sour juice. It is made by pre-mixing sour juice and syrup, and you only need to add alcoholic ingredients to make a cocktail.

When canned lime juice or lemon juice is used to make cocktails, it is difficult for the finished product to achieve sufficient sweetness and sourness, which is quite unfavorable for making short drink cocktails. Moreover, it is a processed product, the taste is not very natural, and the flavor is far inferior to freshly squeezed juice.

However, canned lime juice is very convenient to store, and it is highly recommended to always have it on hand for making cocktails at home.

Lemon juice can only be stored in the refrigerator for one to two weeks at most, but canned lime juice can be stored for more than half a year as long as it is kept at room temperature, cool and away from sunlight. The color will gradually darken due to oxidation after opening the bottle, which is normal and you don't need to worry about it (you should worry if the color doesn't change). The sweet taste is sometimes more acceptable than the sour taste of freshly squeezed juice, and if the acidity is not enough, you can add acid, just like if the sweetness is not enough, you can add sugar!
